I am ordering parts for a computer and this may sound like a stupid question but The motherboard that I am getting has integrated LAN. could someone explain to me what lan is and what is does?

I want to have access to Dial Up internet and High speed internet. do I need to get two different things to put into my computer?

LAN on your motherboard is for high speed internet. For dialup, you need a modem, which will go in a PCI slot.

If you have high speed internet, such as broadband (cable, satalite) you do not need a modem.
